Try this Chopped Greek Salad for your next BBQ
It’s summer!!! Yay – time for outdoor parties with lots of friends, family, and yummy food. It’s always nice to take a tasty and healthy salad to a BBQ, so you have something to enjoy and others can see how easy it is to make good food. Here is a recipe that will add some coolness to the heat. It’s a great side dish for any party or a great lunch salad.
I adapted the recipe from a salad that I order at Sabra Restaurant in Hermosa Beach quite often called the Real Greek Salad.
Here is my version of it – the Chopped Greek Salad. The photo above is missing the feta cheese. It’s a beautiful, colorful light salad that everyone will enjoy.
Chopped Greek Salad
Serving Size: 2-3
Ingredients
1 large tomato, diced
1 cucumber, diced
2 radishes, diced
1/4 red onion, diced
1 green onion, white and green parts sliced thinly
1 handful fresh parsley, chopped
Juice of 1 lemon
1/8 cup olive oil
2 T crumbled feta cheese
Sea salt and black pepper
Instructions
Mix all ingredients together and refrigerate.
