Do you need a little comfort food right now? We all do. But…What’s the biggest problem with comfort food? When we indulge in comfort food it can often make us feel guilty which can make us want more comfort food. Try this healthy comfort food recipe that will leave you feeling comforted but won’t wreck your diet or make you feel guilty.
This recipe calls for one can 14oz or one package of Palmini Pasta. This is my favorite pasta substitute. Palmini is a pasta substitute made out of a natural plant known as hearts of palm. When this plant is cut and cooked in the proper way, its resemblance to regular pasta is remarkable.
Serves 2 People and takes about 20 minutes tops!
One package of uncured ham or six slices of bacon
Two cloves of garlic crushed or chopped
Three large eggs (free range if possible)
1/2 cup white wine
2 tablespoons grated Parmesan plus 2 more for serving
1/4 teaspoon white pepper or fresh ground pepper
One can or package Palmini Pasta
Optional 1 cup roasted mushrooms
Prep-
Cut the bacon into small pieces
Peel and chop garlic,
Whisk the eggs together with the black pepper and Parmesan,
Drain and rinse the pasta
Cook-
Add the bacon to a large skillet over medium high heat. Fully cook the bacon before adding the garlic. Cook for 30 seconds before adding the wine.
Deglaze the pan with the wine, cooking for about a minute to cook off the alcohol. Reduce the heat to a low medium.
Add the pasta and toss with the bacon and garlic sauce before pouring the egg mixture over the top.
Remove from stove and throw into a big bowl
Use tongs to continually toss the pasta around in the sauce.
After a few minutes the egg should thicken and resemble a cream sauce for the pasta.
Serve warm with fresh parsley and additional Parmesan
